Our Baked Tilapia with Mango Salsa recipe is a brilliant burst of sweet and savory. Mangos are also a good source of vitamin C! Explore how an unlikely pair of fish and fruit can work together to make a wonderful dish.

Total Preparation/Cooking time: 45 minutes
Serves: 4 (1 fillet per serving)

Tilapia Ingredients

  • Cooking spray
  • 4 (4 ounce) tilapia fillets
  • 2 teaspoons olive oil
  • Salt and pepper to taste

Mango Salsa

  • 1 ½ cups mango, diced (about 2 mangos)
  • ½ cup red bell pepper, diced
  • 1/3 cup red onion, finely chopped
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon jalapeño, minced
  • 1 tablespoon fresh cilantro leaves, chopped
  • 2 teaspoons ginger, minced
  • 1 teaspoon garlic, minced


Preheat oven to 375 degrees F. Prep all salsa ingredients, place in a bowl, and stir to combine. Lightly coat a 9”x13” baking dish with cooking spray. Brush tilapia fillets with oil and season with salt and pepper. Place fillets in baking dish, cover with foil, and bake for 25-30 minutes or until fish reaches an internal temperature of 145 degrees F. Serve fish topped with mango salsa.
