Serves: 4 (1 fillet per serving)
Tilapia Ingredients
- Cooking spray
- 4 (4 ounce) tilapia fillets
- 2 teaspoons olive oil
- Salt and pepper to taste
Mango Salsa
- 1 ½ cups mango, diced (about 2 mangos)
- ½ cup red bell pepper, diced
- 1/3 cup red onion, finely chopped
- 2 tablespoons apple cider vinegar
- 1 tablespoon lime juice
- 1 tablespoon jalapeño, minced
- 1 tablespoon fresh cilantro leaves, chopped
- 2 teaspoons ginger, minced
- 1 teaspoon garlic, minced
Directions
Preheat oven to 375 degrees F. Prep all salsa ingredients, place in a bowl, and stir to combine. Lightly coat a 9”x13” baking dish with cooking spray. Brush tilapia fillets with oil and season with salt and pepper. Place fillets in baking dish, cover with foil, and bake for 25-30 minutes or until fish reaches an internal temperature of 145 degrees F. Serve fish topped with mango salsa.
