Ingredients
- 2 cup apple cider (fresh pressed I unsweetened preferred)
- 1 cup quinoa (rinsed and well drained)
- 1/2 tsp cinnamon
- 2 Gala apples, cored and chopped
- 1/2 cup celery, chopped
- 1/2 cup walnuts, chopped
- 1/2 cup dried, unsweetened cranberries or cherries
- 1-6 oz. container lemon flavored yogurt (if you use Greek yogurt, use 8 oz.)**
** For vegan options-use unsweetened apple juice and soy or coconut yogurt
Directions
- Combine apple juice, quinoa and cinnamon in a saucepan over high heat and bring to a boil; reduce heat and simmer, covered for 20 minutes or until liquid has evaporated; remove from heat and let sit, covered for 5 minutes. Transfer quinoa to large mixing bowl and cool in fridge for an hour.
- Add apples, celery, walnuts, and cranberries/cherries and mix well.
- Fold in yogurt and serve cold. Travels well and is even better the next day. If it is a little dry, just add a little more yogurt!
