Ingredients
- 2 cups cooked quinoa, warmed
- 2 cups cooked brown rice, warmed
- 2 cups canned black beans, drained and rinsed
- 1 cup diced pineapple
- 2 cups diced red bell pepper
- 1 avocado sliced
- 1/2 of a jicama sliced into sticks
- 1/4 cup almonds
- 1 lime, quartered
- 2 cups grilled chicken, diced
- 1/2 papaya diced
Directions
- Heat the black beans on the stove in a pan on medium heat until warm.
- Meanwhile take four bowls. In each bowl place: 1/4 cup quinoa, 1/4 cup brown rice and top with 2 Tbsp pineapple, 1/4 cup red bell pepper, 1/8th of the avocado, 1/8th of the jicama, 1/2 Tbsp almonds, 1/8th of the lime, 1/4 cup chicken and 2 Tbsp papaya. Top with 1/4 cup black beans and a dressing of your choice!
Yields eight, 1 2/3-cup servings
Serve with Creamy Chipotle Dressing or Cilantro Lime Dressing.
