Academic interests: 

I employ a broad background in nutrition, dietetics, public health and cell biology to address the role of dietary factors, especially nitrate-rich foods like leafy green and root vegetables, in cardiovascular disease risk and physical performance. Current projects include: 1. the roles of dietary nitrate and nitrite on metabolic profiles in muscle and liver associated with improved endurance during exercise in a zebrafish model system (made possible at the Sinnhuber Aquatic Research Lab directed by Dr. Robyn Tanguay), and 2) quantifying the contributions of different food sources of dietary nitrate on total dietary nitrate consumption as well as the environmental and physiological factors affecting nitrate bioavailability. We participate with a large collaborative group of exercise physiologists, Registered Dietitians and other disciplines to assess low cost, effective food-based strategies to lower risk of diet-related chronic disease risk factors in animal models and humans.


Norman Hord holds the position of Celia Strickland and G. Kenneth Austin III Endowed Professor of Public Health and serves as the Past Board Chair of the Association of Nutrition Departments and Programs.

Dr. Hord supervises a research program that focuses dietary nitrate and nitrite in the prevention and treatment of cardiovascular and skeletal disorders that are associated with endothelial nitric oxide (NO) deficiency. Dietary nitrate and nitrite contributes to endogenous NO production from nitrate-nitrite-NO pathway, a newly identified pathway for endogenous bioactive NO production. In this context, foods rich in nitrate and nitrite may prove to be an effective strategy for cardiovascular disease prevention. Through his grant funded research program, he has published research in nutrition, cancer research, cell biology and dietetics journals.

Dr. Hord served as Chair of the Diet and Cancer Research Interest section of the American Society for Nutrition, seventeen year faculty member for the Summer Curriculum in Cancer Prevention at the National Cancer Institute and grant reviewer for National Institutes of Health, USDA and U.S. Department of Defense/ American Institute of Biological Sciences grant review panels.
