Hanako Justice

Hanako is the College of Health MPH Administrative Director.

She graduated with her Master in Public Health (MPH) and Master in Social Welfare (MSW) degree from University of California, Los Angeles in 2021, with a focus on community health sciences and child and family welfare.

She led a research project on sexual health education resources and relevance for autistic young adults, and has been heavily involved in expressive arts-based education for social and emotional learning and mental wellbeing.

Melinda Spooner

Melinda, while a doctoral student, was interested in the use of nutritional supplements as therapies for chronic diseases, especially those involving inflammation. Her projects focused on understanding the progressive nature of Western diet-induced nonalcoholic fatty liver disease to nonalcoholic steatohepatitis, and the efficacy of therapeutic docosahexaenoic acid in attenuating hepatic injury associated with NASH in a mouse model. She planned to advocate for the use of dietary prophylaxis against the development of chronic disease.

Lara Sattgast

Lara is interested in the effects of nutrition and lifestyle factors on bone health. Her graduate research focused on (1) the relationship between IGF-1, bone turnover, and bone marrow adiposity in a non-human primate model of voluntary ethanol consumption, and (2) the effects of housing temperature on energy metabolism and bone in mice.

Recent PhD graduate in Nutrition from Oregon State University, investigating the impacts of nutrition therapies and exposures on reproductive health using semantic knowledge integration. Research projects include ontology curation, data standardization and integration, and basic programming. Experienced instructor with a demonstrated history of working in the higher education through both online and in-person platforms. Skilled in video based nutrition education through YouTube (see Dietitians in Nutrition Support channel), medical nutrition therapy, and nutrition research.
