Terrific Tailgate Taquitos with Savory Sauce

Crunchy meets bold and savory. The sweet potato packs in a healthy dose of vitamin A.

Total Preparation/Cooking time: 30-40 minutes
Serves: 20 (1 taquito with 4 tbsp. sauce per serving)

Ingredients

Taquitos

  • 1 large sweet potato, diced into ½ inch cubes (about 2 cups)
  • 2-4 tablespoons water
  • 1 15-oz can low-sodium black beans, drained and rinsed
  • 1 large avocado, or 2 small avocados, diced (about 1 cup)
  • 2 4.5-oz cans, mild green chilies, diced
  • ½ teaspoon dried cilantro or 1 tablespoon fresh cilantro, minced
  • ½ teaspoon cumin
  • 20 6-inch corn tortillas
  • 2 cups low-fat (2% milk) shredded cheddar cheese
  • cooking spray

Savory Sauce

  • 1 cup plain Greek yogurt, non-fat
  • 1½ cups salsa verde
  • ½ teaspoon dried cilantro or 1 tablespoon fresh cilantro, minced
  •  ½ teaspoon cumin

Instructions

  1. Preheat oven to 400 degrees and spray a large baking sheet with cooking spray.
  2. In a large microwave safe bowl, place diced sweet potato and 2 tablespoons water.  Cook in the microwave, stirring every 2 minutes, until tender and easily pierced by a fork.  Add more water as needed.  (Or alternatively, bake at 400 degrees until tender.)
  3. Once cooked, drain excess water. Add beans, avocado, chilies, cilantro and cumin. Stir until evenly mixed.
  4. Wrap five tortillas in a damp towel. Microwave in 30-second bursts until they are warmed through and pliable enough to roll without cracking. Repeat in batches of five tortillas until all tortillas are warm.  Keep wrapped. (Tortillas can be heated on a griddle until warm and pliable.)
  5. Place 2-3 tablespoons of filling into each tortilla and sprinkle with about 1½ tablespoons of cheese.
  6. Roll tightly and place seam-side down onto prepared baking sheet.  Repeat with remaining tortillas. Spray with a light coating of cooking spray and bake for 15-20 minutes until golden and crispy.
  7. While taquitos bake, prepare the sauce.  In a medium bowl, mix together yogurt, salsa, cilantro and cumin until combined. Refrigerate until ready to use.
  8. Once taquitos are baked, serve with dipping sauce and enjoy!
