Serrano Bowl

Ingredients

  • 2 cups cooked quinoa, warmed
  • 2 cups cooked brown rice, warmed
  • 2 cups canned black beans, drained and rinsed
  • 1 cup diced pineapple
  • 2 cups diced red bell pepper
  • 1 avocado sliced
  • 1/2 of a jicama sliced into sticks
  • 1/4 cup almonds
  • 1 lime, quartered
  • 2 cups grilled chicken, diced
  • 1/2 papaya diced

Directions

  1. Heat the black beans on the stove in a pan on medium heat until warm.
  2. Meanwhile take four bowls. In each bowl place: 1/4 cup quinoa, 1/4 cup brown rice and top with 2 Tbsp pineapple, 1/4 cup red bell pepper, 1/8th of the avocado, 1/8th of the jicama, 1/2 Tbsp almonds, 1/8th of the lime, 1/4 cup chicken and 2 Tbsp papaya. Top with 1/4 cup black beans and a dressing of your choice!

Yields eight, 1 2/3-cup servings

Serve with Creamy Chipotle Dressing or Cilantro Lime Dressing.
