Tammy's research interests are evaluation of alternative protein sources, such as ocean-based underutilized discarded fish (by-catch), as a feasible, environmentally sustainable protein supplement to combat childhood malnutrition globally; antioxidants and free radical metabolism in prevention of diabetes; and the role of diets in gene expressions that influence the susceptibility to chronic diseases.

Michelle's professional career has included working as a clinical dietitian at Parkland Health and Hospital System in Dallas and as the Lead Dietitian for DaVita Healthcare Partners, a large, national chain of renal dialysis clinics, where she has been engaged in clinical nutrition management, quality planning, monitoring and management and other educational and clinical endeavors.

David's research examines the digestion of human and dairy milk proteins and the release of bioactive peptides using in vivo infant and adult digestive samples. His group applies mass spectrometry-based peptidomics and proteomics and functional assays. In addition, he applies this knowledge to examine digestive deficiencies in premature infants.

Emily's research interests are in the area of antioxidants and gene expression and dietary chemoprevention strategies. She is currently interested in understanding the role of the antioxidant nutrients such as zinc in maintaining DNA integrity and cancer development.

Neil’s work aims to ensure that evidence-based practitioners are in the field to provide medical nutrition therapy, and that those who may benefit are able to access nutrition services. Her research at OSU has focused on clinical nutrition service efficacy and outcomes.

Urszula's research foci include: 1) Neuroendocrine regulation of body weight and bone metabolism. 2) Nutrition as a factor in tumor metastasis to bone. 3) Regulation of stromal (stem) cell differentiation into bone cells and fat cells.

Jenny’s research interests include community-based and epidemiological investigations focused on food security and the promotion of healthy eating and physical activity behaviors across the lifespan. Her current projects address food insecurity among U.S. college students.

Don's research investigates the molecular and metabolic basis of complications associated with obesity and diabetes. His current focus is on the role diet plays in the onset and progression of nonalcoholic fatty liver disease (NAFLD), a major global health problem.
